Casa Nueva : An Athens Gem

** Blogger's Note **
My next few blog entries will be devoted to Casa Nueva Restaurant, Cantina and Bodega, which is located at 6 West State Street in uptown Athens. I will take a deeper look into the employees, the operation and (of course) the food. I hope through this series you will gain a better understanding to why Casa has developed a reputation to be such an integral and authentic thread in this southeastern Ohio town.

-------------------------------------------------------------------------------

For just a bit of background on this haven of organic food and local goodness, Casa Nueva began in 1985 as a business cooperative. Currently, 18 worker-owners have invested in the company. Their investment buys them a vote in the operation of the restaurant, from big changes to day-to-day tasks. However, the nearly 60 employees also get a voice and can make suggestions for policies and changes, making it a truely democratic working environment.

All of the meals prepared at Casa Nueva come from food grown locally or regionally that is preferably organic. One of the restaurant's biggest draw of customers is the constantly-evolving menu. A pool of recipes is carefully constructed from the season's best produce and the plates premiere during each new solstice.

To learn more about the history and operation of Casa Nueva, visit the Web site and keep checking in with my blog to get some more of the "behind the scenes" info.
